Betty's Chocolate Cashew Scones -- Mother's Day

In this video, Betty demonstrates how to make Chocolate Cashew Scones. These scones have a rich, dark chocolate taste, with a crunch of salty cashews. They are great for breakfast or brunchor as a snack anytime of the day!


All purpose flour 2 Cup (32 tbs)
Cold butter 1/2 Cup (8 tbs) , cut into slices
Packed light brown sugar 1/2 Cup (8 tbs)
Unsweetened cocoa powder 1/4 Cup (4 tbs)
Baking powder 2 1/2 Teaspoon
Baking soda 1/2 Teaspoon
Salt 1/2 Teaspoon
Eggs 2
Whipping cream 1/2 Cup (8 tbs)
Vanilla extract 1/2 Teaspoon
Semisweet chocolate chips 3/4 Cup (12 tbs)
Salted roasted cashew halves 1/2 Cup (8 tbs) , chopped into small chunks
Milk 2 Tablespoon (small amount) (Optional)
Coarse sugar To Taste (Optional)



1. Line a baking sheet with parchment paper.

2. Preheat oven to 425 degree F.


3. In a large bowl, combine flour and cold butter. Using a pastry blender, cut butter and mix until the mixture reaches the consistency of coarse meal.

4. Add brown sugar, cocoa powder, baking powder, baking soda, and salt. Mix well. Make a well in the center of the dry ingredients and set aside.

5. In a small bowl, stir together eggs, whipping cream, and vanilla.

6. Pour the egg mixture into the bowl with dry ingredients. Gently stir to mix well.

7. Add semisweet chocolate chips and cashews. Stir, just until all dry ingredients are moistened.

8. On lightly floured surface, transfer the dough. Knead dough 10 to 12 times or until fairly smooth.

9. Divide dough in half and lightly roll each into a 5 ½-inch circle about 1-inch thick.

10. Cut each circle into 6 wedges and place them on the baking sheet.

11. Brush each scone with milk and sprinkle with sugar, if desired.

12. Pop it in oven and bake for about 12-13 minutes, or until a toothpick inserted in the center comes out clean.

13. Remove baking sheet from oven and immediately transfer them to a cooling rack. Let cool on a wire rack for about 5 minutes.


14. Serve warm and enjoy!
