Betty's Olive-Pecan Reception Finger Sandwich

In this video, Betty responds to a request for finger food for a wedding reception by demonstrating her Olive-Pecan Reception Finger Sandwiches. These sandwiches are lovely and elegant--perfect for any party or reception!


Cream cheese 8 Ounce (softened to room temperature)
Mayonnaise 1/2 Cup (8 tbs)
Chopped pecan 1/2 Cup (8 tbs)
Sliced green salad olives 1 Cup (16 tbs) , drained (Save the juice)
Olive oil 2 Tablespoon
Ground black pepper 1 Dash
Whole grain bread slice 1/2 Pound (as many as you need for your sandwiches)



1. In a large mixing bowl, combine cream cheese, mayonnaise, chopped pecans, salad olives, 2 tablespoons olive juice, and black pepper. Combine thoroughly.

2. On one slice of bread, spread generous amount of the olive-pecan mixture and top it with another slice.

3. Using a knife, trim the crusts off all four edges and cut horizontally and then vertically to form four identical pieces. Continue to form more sandwiches until you have used up your olive-pecan spread.


4. Serve and enjoy!


This spread may be used for full-sized sandwiches or as a dip with crackers. It is best if it is allowed to chill in the refrigerator overnight or longer to let the flavors mingle and for the spread to set up.
