Fillet with Pappardelle Stroganoff

When you think of entertaining, Beef Stroganoff probably isnt the first thing to come to mind. This classic dish has been revamped to be healthier by using Greek Yogurt and having the presentation of a 5 star restaurant entree.

Ingredients

Olive oil 2 Tablespoon
Yellow onion 1 Small , chopped finely
Mini bella mushrooms 8 Ounce , slice
Garlic clove 1 , minced
Butter 3 Tablespoon
Flour 3 Tablespoon
Reduced sodium beef broth 2 Cup (32 tbs)
Beef fillets 4
Seasoning salt 1 Tablespoon
Pappardelle noodles/Egg noodles 8 Ounce
Greek yogurt 1 Cup (16 tbs)
Salt and pepper To Taste
For garnish
Fresh parsley 1 Tablespoon

Directions

GETTING READY

1. Preheat oven to 450 degree F.

2. In a large pot bring water up to a boil and add generous amount of salt to it.

3. Season fillets evenly with seasoning salt and pepper.

MAKING

4. Place fillets on a hot grill pan and cook for 4 minutes on the first side. Flip and cook for 3 minutes on the other side.

5. Pop the pan in oven and cook to desired doneness. If the fillets are done prior to the sauce or noodles, just cover with foil and keep it warm.

6. While fillets are in oven, for sauce, place a large saute pan, over medium-high heat and drizzle olive oil in it.

7. Add onions and saute for about 4 minutes or until they become translucent.

8. Add in the mushrooms, stir occasionally and cook for another 3 minutes.

9. Turn heat to medium, stir in the garlic and cook for 1 minute.

10. Add butter and flour, stir and cook for 2 minutes.

11. Whisk in beef broth and return the heat to a medium-high. Cook for an additional 1-2 minutes or until the sauce becomes slightly thick.

12. Turn the heat to low and season with salt and pepper to taste.

13. Right before ready to serve drop the noodles into the pot of salted boiling water and cook for 3 minutes or until al dente.

14. When the noodles go into the pot of water, stir in the yogurt to the mushroom sauce.

FINALIZING

15. On serving platter, spoon mushroom sauce on the bottom, top it with the noodles and then place the fillet over the noodles.

SERVING

16. Garnish with fresh parsley and serve hot.
