Yogurt Cake with Chocolate Ganache Icing

Super moist and rich cake - covered in a decadent chocolate icing... Plus it's so easy to make, this is a great mid-week treat!

Ingredients

For cake
Softened butter 115 Gram (1/2 cup)
All purpose flour 325 Gram (2 cups)
Baking powder 1 Teaspoon
Baking soda 1 Teaspoon
Salt 1/4 Teaspoon
Granulated sugar 220 Gram (1 cup)
Eggs 3 Large
Plain yogurt 375 Milliliter (1 1/2 cups)
Pure vanilla extract 2 Teaspoon
For the ganache icing
35% cream 175 Milliliter
Semisweet chocolate 325 Gram , chopped (8 ounce)
Corn syrup 1 Tablespoon
For greasing
Softened butter 1/2 Teaspoon (For greasing)

Directions

GETTING READY

1. Preheat oven to 350 degree F or 180 degree C.

2. Butter and line a 9-inch cake pan with parchment paper.

MAKING

3. In a medium bowl, combine flour, baking powder, baking soda, and salt. Whisk to combine.

4. In a stand mixer fitted with a paddle attachment, add sugar and butter. Beat on medium speed until smooth and fluffy.

5. Reduce the speed to low, and then add the eggs, one at a time.

6. Add the yogurt and vanilla. Beat until well combined, scraping the sides as and when needed.

7. Add the dry ingredients and mix until just incorporated.

8. Into the prepared pan, transfer the batter and spread evenly.

9. Pop the pan in oven and bake for about 45 minutes or until a cake tester comes out clean.

10. Remove pan from oven and let cool completely on a rack before lifting the cake out of the pan.

For the icing:

11. In a saucepan, pour cream and bring it to a boil over medium heat.

12. Reduce heat to low, add the corn syrup and chocolate. Whisk until the chocolate is completely melted and smooth.

13. Remove the pan from heat and let cool for 15 minutes.

14. Transfer it to a bowl and refrigerate uncovered for about 45 minutes, stirring it every 10 minutes.

FINALIZING

15. Transfer the cake to a platter and spread the icing all over.

SERVING

16. Cut into slices, serve and enjoy!
