You can make colcannon for St. Patricks' Day. It goes so well with corned beef.
Yukon gold potatoes | 2 Pound | |
Shredded cabbage | 3 Cup (48 tbs) , thinly shredded | |
Half and half | 1/2 Cup (8 tbs) | |
Butter | 1/8 Cup (2 tbs) | |
Kosher salt | To Taste | |
Pepper | To Taste |
GETTING READY
1. Peel the potatoes, and cut in about 1-inch cubes.
2. Shred the cabbage thinly.
MAKING
3. In a pot, place the potatoes and pour in enough water to cover them, add salt and place the pan over medium heat and bring to boil.
4. Simmer and allow the potatoes to cook for 15 minutes.
5. After 10 minutes, add in the cabbage and allow to cook for 5 minutes.
6. Drain the cabbage and potato.
7. In a large bowl, place the cabbage and potatoes, add in half and half, butter, salt and pepper.
8. Using an electric hand beater, beat the potato mixture until the mixture is mashed.
SERVING
9. Served hot as desired.
