Dandy Victoria Meyer Lemon Sponge Cake

Nothing says Easter and spring entertaining like a slice of Meyer lemon cake and I am taking our traditional family recipe and giving it a Meyer lemon twist.
The sweetness of the Meyer lemon pairs well with the vanilla and makes this one cake you will wish you had more of. The recipe uses grams rather than ounces, it gives it a more genuine taste and texture and well worth sticking to the original measurements.


Unsalted buter 225 Gram (at room temperature)
White granulated sugar 225 Gram
Vanilla extract 1 Teaspoon
Eggs 4 Large
White flour 225 Gram
Baking powder 1 1/2 Teaspoon (Optional)
Milk 2 Tablespoon (1
Whipped cream fresh 1/2 Cup (8 tbs) (Fresh Vanilla Whipped Cream)
Meyer lemon compote 1/2 Cup (8 tbs)
Powdered sugar 1/2 Centiliter (for dustring)



1. To a large mixing bowl, add the butter and sugar and blend until smooth before adding the vanilla extract.

2. Add 1 egg and blend with the butter batter, once blended add a portion of the flour, blending together until smooth.

3. Repeat the process of alternating between the eggs and flour until all the flour and eggs are in the batter.

4. And then add the baking soda if you are using it.

5. If your batter is too thick, add a tablespoon of milk at a time, blending until you have a creamy batter.

6. Butter your baking pans and then add in the batter, ensuring that the top is smooth and flat before placing in a pre heated 350F oven.


7. Bake for 20 minutes or until the cakes are spongy, and then remove them from the oven, allowing them to cool before dressing them.


8. Place the Dandy Meyer Lemon compote on the top of the bottom cake layer, spreading evenly across the top. And then top with freshly whipped vanilla whipped cream.

9.Top the bottom layer with a sponge cake, pressing down to create a sandwich, and then dust with confection sugar before serving.


10. Serve as desired.
