Irish Seafood Chowder by Good Food Ireland

A classic recipe using the fruits of the Irish Sea by Eugene Callaghan of Kellys Resort Hotel Spa. The flavours of the fish speak for themselves and only simple vegetables, a splash of white wine, cream and seasoning are all thats needed to be added to this dish. Onions 1 Medium , diced
Carrot 1 Medium , dice
Celery stick 2 Medium , dice
Diced potato 200 Gram , peeled
Smoked haddock fillets 500 Gram , dice
Mussels 1 Kilogram
White wine 1 Cup (16 tbs)
Cream 1/2 Liter
Full fat milk 1/2 Liter
Saffron strands 1 Pinch (((Dissolved in a tablespoon of water)))
Butter 50 Gram
Flour 50 Gram
Salt To Taste



1)On a chopping board dice the carrot, celery, onion and potato into small even pieces.

2)Wash & pull the beards on the mussels before steaming in a large pot with white wine.


3)When the mussels are cooked, strain the mussel juice through a sieve & reserve the cooked mussels along with the juice as this will be used as a stock in the chowder

4)Meanwhile in a sauce pan heat 1 tbsp of butter and cook for 5 minutes or until done the diced carrot, celery, onion and potato. This is the mirepoix for the chowder.

5)Scoop the mussels from the shell and set aside. Dice the smoked haddock into small chunks and set this aside as well.

6)In a bowl to make a Beurre Manie by mixing the remaining soft butter & flour and whisk well.

7)In another sauce pan boil the cream, milk, mussel juice & diluted saffron. To this boiling mixture now whisk in the Beurre Manie and bring back to a simmer stirring continuously.

8)When the mirepoix is cooked for 5 minutes add the diced smoked haddock, followed by the thickened cream/mussel stock & the cooked mussels.

9)Bring the soup back to a simmer and make sure the dish is seasoned well.


10)Serve warm in bowls with crusty wholemeal bread or any other kinds of breads on the side and enjoy!
