Western Omelette

Ingredients

Lean bacon slice 4
Chopped onion 1 Cup (16 tbs)
Chopped sweet green pepper 1 Cup (16 tbs)
Garlic 2 Clove (10 gm) , minced
Black pepper 1/4 Teaspoon (Or To Taste)
Eggs 3 Large
Egg whites 2 Large
Cold water 1 Tablespoon
Hot red pepper sauce 1/2 Teaspoon
Minced parsley 2 Tablespoon

Directions

1. In a 10-inch nonstick skillet, cook the bacon over moderate heat for 5 minutes or until crisp; drain on paper towels and crumble. Discard the drippings.

2. Preheat the broiler. In the skillet, saute the onion, green pepper, garlic, and 1/8 teaspoon of the black pepper, stirring occasionally, for 5 minutes or until tender. Stir in the bacon.

3. Meanwhile, in a medium-size bowl, whisk together the eggs, egg whites, water, red pepper sauce, and the remaining 1/8 teaspoon of black pepper. Pour this mixture over the vegetables, lower the heat and cook, without stirring, for 2 minutes or until the eggs are set on the bottom.

4. Wrap the skillet handle 'with foil and broil the eggs, 4 inches from the heat, for 3 minutes or until set. Sprinkle with the parsley; serve immediately with generous helpings of Hash Browns.
