Broccoli Swiss Soup

Ingredients

Broccoli flowerets/One 10 ounce package frozen cut broccoli 2 Cup (32 tbs)
Chicken broth 1 Cup (16 tbs)
Carrot 1/2 Cup (8 tbs) , finely chopped
Onion 2 Tablespoon , finely chopped
All purpose flour
Pepper 1/8 Teaspoon
Milk 1 1/2 Cup (24 tbs)
Processed swiss cheese 4 Ounce , shredded (1 Cup)

Directions

MAKING

1) To cook fresh broccoli, in a 1 1/2-quart casserole add broccoli and 2 tablespoons water.

2) Cook covered on 100% power (high) for 4 to 6 minutes.

3) To cook frozen broccoli, follow the package microwave directions.

4) Drain the broccoli and keep aside.

5) In the 1 1/2-quart casserole add 14 cup of the chicken broth, carrot, and onion.

6) Cook covered on high for 3 to 5 minutes.

7) In a screw-top jar add remaining broth, flour, and pepper. Shake together

8) Mix flour mixture and milk into the carrot mixture.

9) Cook on high for 7 to 9 minutes stirring every minute till the mixture thickens and then stirring every 30 seconds.

10) Cook on high for 1 minute.

11) Add cheese to the broccoli. Stir well.

12) Cook covered on high for 1 minute.

SERVING

13) Serve hot.
