Cider Welsh Rarebit

Ingredients

Butter/Margarine 1/4 Cup (4 tbs)
Flour 1/4 Cup (4 tbs)
Dry mustard 1/2 Teaspoon
Worcestershire sauce 1/2 Teaspoon
Cayenne pepper 1/8 Teaspoon
Ground nutmeg 1 Dash
Salt 1/2 Teaspoon
Pepper 1/4 Teaspoon
Milk 1 Cup (16 tbs)
Beer/Cider 1/2 Cup (8 tbs)
Shredded cheddar cheese 2 Cup (32 tbs)
Toasts/Biscuits / toasted english muffins 4

Directions

1. Place butter in a 1 1/2-quart glass casserole. Microwave at Cook Cycle 1 (power level 10) for 1 1/2 to 2 1/2 minutes, or until melted. Stir in flour and seasonings, blending to make a smooth paste. Add milk, stirring until smooth. Microwave, uncovered, at Cook Cycle 2 (power level 10) for 4 minutes, or until boiling and thickened, stirring every minute. Mixture will be very thick.

2. Stir beer into milk mixture. Add cheese. Microwave, uncovered, at Cook Cycle 1 (power level 7) for 5 to 6 1/2 minutes, or until cheese has melted, stirring every minute. Serve over toast, biscuits, or toasted English muffins and sprinkle pepper on it.
