Who doesn't love cinnamon and sugar pretzel bites? They are so easy to make, and you will have enough for a large crowd in very little time. These can be easier to make than regular pretzels because their is not special twisting of the dough.
These cinnamon and sugar pretzels are salty and sweet.

Brown sugar | 2 Tablespoon | |
Salt | 1 1/8 Teaspoon | |
Bread flour | 1 Cup (16 tbs) | |
Regular flour | 3 Cup (48 tbs) | |
For baking powder bath | ||
Warm water | 2 Cup (32 tbs) | |
Baking soda | 2 Tablespoon | |
For topping | ||
Melted butter | 1/2 Cup (8 tbs) | |
Sugar | 1/2 Cup (8 tbs) | |
Cinnamon | 2 Tablespoon |
GETTING READY
In a mixing bowl, pour in lukewarm water and sprinkle yeast; stir to dissolve.
Add sugar, salt and mix again.
Stir in both flours and knead dough until smooth and elastic. Let rise for 30 minutes.
Preheat the oven to 450 degrees F. Grease a baking sheet with butter and set aside.
MAKING
Once the dough has risen transfer the dough to a lightly greased work surface, and divide it into six equal pieces.
Roll the six pieces of dough into 12" to 15" ropes. Cut each rope crosswise into about 12 pieces.
For baking soda water bath – in a bowl, pour in warm water and add in baking soda. Stir well.
Place the bites into the solution, gently swish them around, and leave them there for a couple of minutes. Transfer them to a prepared baking sheet.
Bake the bites for 12 to 15 minutes, until golden brown. Remove them from the oven, and roll them in the melted butter.
For cinnamon-sugar mixture – in a large bowl, mix together cinnamon and sugar.
FINALIZING
Toss the pretzels in butter then with cinnamon-sugar mixture. Place over the cooling rack.
SERVING
Serve with tea or coffee.
