Mushroom pierogi are a traditional Polish recipe served at Christmas. Thank you to Marta for helping me with the pierogi recipe!
For dough: | ||
Flour | 1 Cup (16 tbs) , sifted | |
Salt | 1/4 Tablespoon (Leveled) | |
Egg | 1 , whisked with water | |
Water | 1 Tablespoon | |
For filling: | ||
Butter | 1 Tablespoon | |
Minced onion | 1/2 Cup (8 tbs) | |
Mushrooms | 4 Ounce , finely chopped | |
Dried porcini | 1/2 Ounce , soaked overnight, finely chopped, reserve liquid | |
Salt | To Taste | |
Pepper | To Taste | |
For topping: | ||
Butter/Oil | 2 Tablespoon | |
Onion | 1 Small , cut into thin rings |
MAKING:
1.In a bowl, combine flour and salt. Add egg mixture and knead for 2-3 minutes. Cover and set aside for 20 minutes.
2.For filling, melt butter in a pan and saute onion for few minutes. Add mushrooms, salt, pepper and cook for 10 minutes until soft. Add soaked liquid and cook for 5-10 minutes until dry. Remove from heat and allow to cool.
3.Roll dough to 1/8 thick sheet on a floured surface and cut into 3 circles. Repeat the process until dough is completely used.
4.Place 1 teaspoon of filling, fold and seal as shown in the video.
5.Boil water in a large pot and drop pierogi into it. Cook until it floats. Once done, remove from water and place on an oiled plate.
6.For topping, melt butter in a skillet and saute onions in it until brown. Push onions to outer edges of skillet. Add pierogis to skillet and saute for couple of minutes.
SERVING:
7.Serve with fried onions, sour cream and enjoy!
