|Egg whites||4 Medium|
|Caster sugar||100 Gram|
|Icing sugar||100 Gram|
|Peppermint essence||1/2 Teaspoon|
|Green gel||3 Drop|
|Sugar stars||1/4 Cup (4 tbs) ((To Decorate))|
Preheat the oven to 100°C.
Line baking sheets with grease-proof paper or parchment paper.
Using a hand mixer, add egg whites and beat well until fluffy and stiff peaks,
Add icing sugar and caster sugar gradually and beat well until thick and glossy.
Mix vinegar and water in a small bowl. Add the vinegar mixture, peppermint essence, green gel to the egg white mixture. Whisk until stiff peaks.
Spoon mixture on baking sheet using piping bag with star nozzle. Decorate with sugar stars and nuts of choice.
Pop into oven and bake for 60-75 minutes. Once cooled, dust icing sugar on top.
