In this episode of Canapes and Cocktails, Made In Chelsea sisters Olivia and Fran Newman-Young create a show stopping tower of festive chocolate meringues, perfect to impress everyone this christmas.
|Caster sugar||230 Gram|
|Icing sugar||210 Gram|
|Cocoa powder||4 Tablespoon|
|Crushed hazelnuts||400 Gram|
|Dark chocolate||500 Gram|
|Caster sugar||100 Gram|
|Double cream||300 Milliliter|
Preheat the oven to 100°C.
Line baking sheets with non-stick liner or parchment paper.
In a mixing bowl, add egg whites and beat well until fluffy and stiff peaks,
Add caster sugar gradually and beat well until thick and glossy.
Fold in icing sugar and sift in cocoa powder. Mix well as shown in the video.
Scoop one dessertspoonful of mixture and place on baking tray.
Pop into oven and bake for 1 ½ -1 ¾ hours. Once done, allow to cool completely.
Dip into chocolate and hazelnuts as shown in the video.
In a bowl, whip the cream until soft peaks. Place between two meringues to make sandwich.
For butterscotch, dissolve castor sugar with 3 tablespoons of water in low heat. Bring to boil (without stirring) and when it turns dark golden in colour, add butter.
Remove from heat and stir in double cream.
Make towers and decorate as shown in the video.
