Cold Borscht

This cold borscht is one of my favorite foods ever. It is easy to make and it has truly sensational taste. You can eat it cold or hot or anyway in between and it's really great to have around. Enjoy!

Ingredients

Cold water 2 Liter
Beetroot 2 Pound
Potatoes 1 1/2 Pound
Himalayan pink salt 1 1/2 Teaspoon
Lemon 1 , juiced
Cane sugar 3 Teaspoon
Chopped green onion 2 Tablespoon
Hard boiled eggs 2
Sour cream 8 Tablespoon
Baby dill 2 Tablespoon

Directions

MAKING

1. Fill a large pot with cold water. Add the beets to it along with potatoes. Bring to a boil and then lower the heat and allow to simmer till the vegetables are fork tender.

2. Add Himalayan pink salt an stir. Using an immersion blender, blend the beets and potatoes until smooth.

3. Add in the lemon juice and stir to combine. taste and adjust the seasoning as per your taste by adding more lemon juice or some sugar.

SERVING

4.. Ladle into soup bowls and garnish with boiled eggs, green onion and sour cream. Serve.
