Apricot-Sage Chicken Breast and Steamed Green Beans.


For the chicken
Boneless and skinless chicken breasts 2 Large (cut in to yield 4 pieces)
Olive oil 2 Teaspoon
Sea salt To Taste
For the sauce
Olive oil 20 Gram (2 tablespoons + 1 teaspoon)
Shallot 1 Medium , finely chopped
Apricot jam 9 Tablespoon (1/2 cup + 1 tablespoon)
Brown sugar 2 Tablespoon
Low sodium soy sauce 2 Tablespoon
Fresh sage leaf 1 Tablespoon , minced
Dry white wine 1/2 Cup (8 tbs)



For the chicken - in an unsealed zip lock bag, place a chicken breast and pound with a meat hammer until flattened (about “ thick). Repeat with remaining breasts.


Season the chicken with olive oil and sea salt.

Pan sear, turning once, over medium heat until lightly browned and cooked through.

Place cooked chicken on an oven proof plate in a warm oven while you prepare sauce.

For the sauce - in a saucepan, heat oil and add shallots. Cook over medium-high heat until golden.

Add jam, brown sugar, soy sauce, sage, wine, and 1/2 cups water. Bring to a boil. Reduce heat to low and let the sauce reduce to a thick glaze for 25 minutes.


Plate chicken breasts and spoon sauce over top and serve with steamed green beans.
