Are you looking for an insanely delicious appetizer that you can throw together within a moments notice?! Well.. this is the recipe for you. I dont know about you but I literally always have cherry tomatoes, goat cheese, basil, thyme, and lemons in my refrigerator. Theyre just versatile ingredients and for me a staple in my cooking. I made this for my grandmother the other day and she freaked out at how easy and good it was. You slowly bake the tomatoes and then once those are done add the goat cheese to the top and the heat of the tomatoes slowly melts the cheese need I say more?! I didnt think so.
Cherry tomatoes | 1 Pint | |

Fresh thyme sprigs | 3 (leaves) | |
Extra virgin olive oil | 3 Tablespoon | |

For the goat cheese | ||
Goat cheese | 4 Ounce | |
Fresh basil leaves | 5 , chiffonade | |
Fresh thyme sprigs | 5 (leaves) | |
Zest of lemon | 1 |
GETTING READY
Preheat the oven to 325 degrees F.
MAKING
In a fancy baking dish, add the cherry tomatoes, garlic, thyme leaves, salt, pepper, and olive oil.
Toss well to coat the tomatoes well. Bake in the oven for 30 minutes.
Meanwhile, in a small plate, add the basil, thyme leaves, and lemon zest. Toss with a spoon and roll the goat cheese in the mixture to coat evenly and set it aside.
After 30 minutes broil the tomatoes for 1-2 minutes.
Take out the tomatoes and put the herbed goat cheese on top.
SERVING
Serve with crusty bread and enjoy.
