I wanted to make some pizza because I've been practicing my dough and I'm starting to get into it. But since we're in the month of August I definitely wasn't going to be turning the oven on to 500 degrees. So I decided to grill it and I think you guys will enjoy this recipe.
Cornmeal/Semolina flour | 3 Tablespoon | |
Extra virgin olive oil | 2 Tablespoon (plus extra for brushing the dough) | |
Linguica smoked sausage/Silva sausage co. recommended | 1 Cup (16 tbs) , cut into small chunks | |
Diced grilled chicken | 3/4 Cup (12 tbs) | |
Pizza sauce | 3/4 Cup (12 tbs) | |
Fresh mozzarella balls | 2 , sliced | |
Shredded manchego cheese | 3/4 Cup (12 tbs) | |
Thinly sliced red onions | 5 (to taste) | |
Thinly sliced roasted peppers | 5 | |
Thinly sliced fresh thyme | 5 | |
Thinly sliced fresh basil | 5 (to taste) | |
Pizza dough | 1 Cup (16 tbs) |
GETTING READY:
Preheat grill to 500°.
MAKING:
Heat a medium size skillet and sauté linguica pieces in olive oil.
Roll out the pizza dough (http://ifood.tv/pizza/1002746-how-to-make-pizza-dough) about ¼ inch thick on a floured surface.
Brush the pizza peel with corn meal. Place the rolled out dough on the pizza peel with oil in the edges.
Spread the pizza sauce on the dough and top with manchego cheese, mozzarella cheese, chicken and linguica. Top with peppers, onions, parsley and basil.
Slide the pizza dough onto heated grill and cook for about 8-10 minutes at 400-500° (direct and indirect heat).
