How To Make Chicken Adobo Pinoy

This is Filipino Chicken Adobo. This is not your regular Chicken Adobo. This is a soul food version of Chicken Adobo that is a popular Pinoy recipe. This is Adobong Atay Balunbalunan Ng Manok or Chicken Adobo With Chicken Hearts, Gizzards And Livers. This is not your average Chicken Adobo that you might or might not see on your average everyday Filipino/Philippino restaurant. The recipe can be found below. Enjoy!


Oil 4 Tablespoon
Garlic cloves 5 , crushed
Chicken giblets 8 Ounce
Chicken liver 8 Ounce
Chicken hearts 8 Ounce
Brown onion 1
Soy sauce 1/4 Cup (4 tbs)
Coconut vinegar 1/4 Cup (4 tbs)
Minced ginger 5 Gram
Chicken stock 1/2 Cup (8 tbs)
Bay leaf 3
Dried chili 3
Brown sugar 2 Tablespoon
Hard boiled egg 6
Peppercorn 1 Teaspoon
Salt 1 Teaspoon
Fish sauce 1 Tablespoon
For adobo marinate
Ketchup 8 Tablespoon
Soy sauce 4 Tablespoon
Coconut vinegar 1 Tablespoon
Lime 2 , juice
Hot sauce To Taste (Optional)
Brown sugar 2 Tablespoon
Garlic powder 2 Teaspoon
Pepper To Taste



1. Mix together all ingrdients of the marinade. Add the giblets, liver and heatch, allow to marinate for at least 2 hours. Reserve the marinate for serving.


2. In a pan, heat oil, saute onion and garlic until soft, add ginger and cook for another couple of minutes.

3. Add in the chicken and cook until brown. Season with salt and pepper, add in th other ingredients and simmer until the sauce is thick.


4. Serve with rice or as desired.
