Bean Enchiladas

Ingredients

Canned pinto beans 30 Ounce , rinsed and well drained (2 Cans,15 Ounces Each)
Chili powder 1 Tablespoon
Flour tortillas 8
Shredded reduced fat monterey jack cheese 1/2 Cup (8 tbs)

Directions

With a potato masher, stir in the chili powder.

Wrap the tortillas in a damp paper towel and microwave on high for 45 seconds, or until pliable.

Divide the bean mixture among the tortillas.

Sprinkle the mixture with the Monterey Jack.

Roll the tortillas to enclose the mixture.

Coat a 9" X 13" baking dish with no-stick spray.

Place the enchiladas, seam side down, in the dish.

Cover with foil and bake at 350° for 20 minutes, or until heated through.
