Spinach Eggs

Eggs rich in protein with a combination of naturally strong flavored spinach makes a great breakfast. Awesome way of having your greens first thing in the morning.


Olive oil 1 Tablespoon
Spinach leaves 2 Cup (32 tbs) , chopped finely
Minced garlic 2 Teaspoon
Egg whites 1 1/4 Cup (20 tbs)
Salt & pepper To Taste



1. Heat oil over medium flame in a small skillet. Add garlic cook for 1 minute. Stir in spinach cook for about 5 minutes, until spinach is heated through and excess water has evaporated.

2. Season spinach with salt and pepper. Keep aside.

3. In a separate pan over medium low, coat with a little oil add eggs and begin to scramble, once eggs begin to set stir in spinach. Cook another minute and you are done.


4. Serve Hot with couple of toasts.
