Dr. Suess Eggs - Breakfast Recipes for Kids

How many times have you read Green Eggs and Ham with your kids? You know that book that your kids beg you to read over and over again? The best part about it, though, is that it makes kids want and choose to eat green eggs and ham! If youve thought about making it before, but worried your kids would protest, Dr. Seuss Day is the perfect day to give it a try.

Ingredients

Spinach 1 Cup (16 tbs) , chopped
Butter/Oil 1 Teaspoon
Salt 1 Pinch
Eggs 4
Milk 2 Tablespoon
Prosciutto slice/Ham slice 2 , cut into small pieces
Gruyere cheese 1/4 Cup (4 tbs) , shredded

Directions

MAKING

1. Heat the butter in a saute pan over medium heat and cook the spinach and salt for 2 minutes or until wilted.

2. In a bowl whisk the eggs and milk until combined.

3. Add the eggs to the spinach and cook for 2 minutes or until just beginning to set.

4.Add the prosciutto or ham and the cheese to the eggs and cook for an additional minute.

SERVING

5.Serve and enjoy!
