Avocado | 1 , halved | |
Eggs | 2 | |
Chorizo | 10 Gram , finely chopped | |
Juice of lime | 1/4 , divided | |
Salt and pepper | To Taste | |
For garnish | ||
Chopped cilantro | 1/4 Tablespoon | |
Chopped jalapeno | 1/8 Teaspoon | |
Fresh lime juice | 1 Dash |
GETTING READY
Preheat oven to 425 degrees F. Line a baking sheet with aluminum foil and set aside.
MAKING
Using a spoon, lightly scoop out the flesh from the avocados and place the chorizo, followed by the lime juice and salt and pepper.
Place the avocados over the prepared baking sheet and carefully break the eggs. Bake for 15 minutes.
SERVING
Garnish the eggs with cilantro, jalapeno and lime juice and serve.
