Baked Eggs in Avocado

Looking for a quick, easy, healthy, and super delicious breakfast? Look no further! I love making these because you can make one just for your self or for 30 people. I add some spicy toppings to make it even more interesting.

Ingredients

Avocado 1 , halved
Eggs 2
Chorizo 10 Gram , finely chopped
Juice of lime 1/4 , divided
Salt and pepper To Taste
For garnish
Chopped cilantro 1/4 Tablespoon
Chopped jalapeno 1/8 Teaspoon
Fresh lime juice 1 Dash

Directions

GETTING READY

Preheat oven to 425 degrees F. Line a baking sheet with aluminum foil and set aside.

 

MAKING

Using a spoon, lightly scoop out the flesh from the avocados and place the chorizo, followed by the lime juice and salt and pepper.

Place the avocados over the prepared baking sheet and carefully break the eggs. Bake for 15 minutes.

 

SERVING

Garnish the eggs with cilantro, jalapeno and lime juice and serve.
