Akwan's Kitchen - S4E1: Chinese Dumplings (jiaozi) Season 4 Premiere

Happy Lunar New Year everyone! To celebrate the start of the Year of the Snake, we show you how to make a traditional Chinese New Year staple--the dumpling!

Ingredients

Ginger 1 Teaspoon , minced
Garlic 1/2 Teaspoon , minced
Chives 3 Tablespoon , chopped finely
Mushrooms 4 Tablespoon , chopped finely
Shrimp 1/2 Cup (8 tbs) , chopped
Ground pork meat 1 Pound
Sesame oil 1 Tablespoon
White pepper powder To Taste
Salt To Taste
Soy sauce 3 Tablespoon
Eggs 1 Medium , beaten
For dumpling wrapper
Flour 4 Cup (64 tbs)
Hot water 1 Cup (16 tbs) (as required)

Directions

GETTING READY

1. In a large bowl, add all the ingredients for the filling and using clean hands mix them well till combined.

2. Cover with a plastic wrap and refrigerate till used.

3. In another bowl, add the flour, hot water and salt.

4. Mix well till it form a ball and comes together.

5. Place them on the work surface and knead till soft and elastic.

6. Wrap in plastic wrap and set aside to rest for at least 15 minutes to 2 hours.

MAKING

7. Take the filling from the fridge.

8. Take small portion of the dough and roll it into a long tube.

9. Using knife cut it into small balls of same size.

10. Roll each ball either with a rolling pin or hand.

11. Put some filling in the center. Wet the sides with water and fold it into a crescent or semi circle.

12. Seal the side by gently pressing and folding into a crease.

13. In a deep frying pan, heat oil to medium high and put the dumplings carefully.

14. Fry them for 5 minutes or till they begin to float on top of the oil.

15. Transfer them onto paper towel to drain off excess oil.

SERVING

16. In a serving plate, serve them with choice of dip.
