We all have those times, when we wish to Snack ON something, so why not make some Veg Nuggets or angrezi cutlets as i call them, loaded with crunchy veggies, extremely healthy..
Boiled potatoes | 6 Medium | |
Chopped zucchini | 1/4 Cup (4 tbs) | |
Chopped french beans | 1/4 Cup (4 tbs) | |
Chopped carrots | 1/3 Cup (5.33 tbs) | |
Chopped onion | 1/4 Cup (4 tbs) | |
Green peas | 1/4 Cup (4 tbs) | |
Sweet corn | 1/4 Cup (4 tbs) | |
Chopped coriander | 1/4 Cup (4 tbs) (Handful) | |
Ginger | 1/2 Inch , chopped finely | |
Green chili | 1 Large , chopped | |
Oregano | 1/2 Teaspoon | |
Thyme | 1/2 Teaspoon | |
Garlic powder/1 tsp chopped garlic | 1/2 Teaspoon | |
Salt | To Taste | |
Pepper | 1/2 Teaspoon | |
Lemon juice | 1 Teaspoon (Juice of half a Lemon) | |
Bread crumbs | 3/4 Cup (12 tbs) (A mixture of bread crumbs and cornflakes can be used) | |
Canola oil | 2 Cup (32 tbs) (For Deep Frying) | |
Corn flour | 1/4 Cup (4 tbs) (Dissolved in 1 Cup Water) |
MAKING
Heat up a wok with the oil to fry the nuggets.
In a mixing bowl, add the boiled potatoes and mash them. Add in all the ingredients else except the Corn Flour mix and bread crumbs.
Use your hand to mix the ingredients well, now add a handful of breadcrumbs (Use a mixture of bread crumbs and crushed cornflakes for extra crunch) depending upon the moisture level of the mix. Mix well.
Divide the mix into equal portions and shape into nuggets.
Dip the nuggets in corn flour mix and coat in bread crumbs. Re coat if you wish to.
Fry in medium high flame until they turn golden. Remove the nuggets from the oil carefully.
SERVING
Serve the nuggets with avocado & kiwi salsa or ketchup.
Notes Avocado and Kiwi Salsa Recipe - In a salsa maker/chopper add roughly diced 1 large avocado, 1 kiwi, ½ onion, 1 tomato, 1 green chili, 1 tsp lemon juice, 1 tsp sugar, Salt-n-pepper to taste, little bit of coriander. Blend until ready, enjoy!
