Cedar Planked Duck Breast Orange Style English Grill and BBQ

Cedat planked duckbreast. My christmas gift for you -). Merry christmas everyone! A great recipe for Grill and Smoker.


Duck breast 2
For brine
Orange juice 1 Cup (16 tbs)
Kosher salt 1 Tablespoon
White pepper 1 Tablespoon
Dried coriander 1 Teaspoon
Soya sauce 3 Tablespoon
Other ingredient
Seasoning To Taste (Seasoning New york, Contains Salt and Pepper)



1. Score the fat on top of the duck breast.

2. Prepare brine by mixing together orange juice, salt, pepper, coriander and soya sauce together. Soak the duck breast for at least 12 hours in the brine in the refrigerator.

3. Dip cedar plank in orange juice and let it rest for at least 4 hours.

4. Preheat the grill.


4. Take the duck breast out of brine and dry it with paper towel. Season it with seasoning.

5. Place the cedar plank over direct heat on the grill and let it rest. Flip it when it starts to smoke a little bit and place it on the indirect heat.

6. Arrange the breast pieces over the plank and let it cook until the internal meat temperature reaches 65 F.

7. Transfer the duck breast over to the direct heat to crisp up the skin.


8. Slice and serve the duck breast on a platter with or without a sauce.
