Creamy Basil-Lime-Ginger Dressing

After you get the 'healthy' part of cooking down, it's time to focus on making your food taste awesome. 'Cause let's face it - if you tell someone you made an exceptionally healthy meal, they're probably going to assume it tastes like cardboard, right? There are lots of things you can do to add flavor to your cooking, but using fresh herbs like basil will take an ordinary dish and make it extraordinary. One of my favorite flavor combinations is basil, lime and ginger - all best when they're used fresh.

Ingredients

Nut butter/Seed butter 2 Tablespoon (almond, cashew, sunflower seed, tahini, etc)
Fresh lime juice 2 Tablespoon
Lime zest 1 Teaspoon
Fresh basil 1 Cup (16 tbs)
Fresh chives/Green onion 1 Cup (16 tbs)
Fresh ginger 1 Teaspoon , grated
Water 4 Tablespoon (more or less, for the consistency you want)

Directions

MAKING

1. Combine all of the ingredients in a blender or food processor.

2. Blend until smooth and creamy.

3. Use immediately while fresh or store in a sterilized bottle in the refrigerator until required but it is best to use on the same day.

SERVING

4. This dressing works really well drizzled over sweet potatoes and tossed with some fresh greens. Or, you can leave it thicker and use it as a dip for some fresh cucumber slices and cherry tomatoes. Try it with different dishes and see how you like it. The best way to learn is to experiment!

TIPS

For a milder ginger flavor, squeeze the juice from the grated pulp rather than adding it all.

Add a pinch of salt if you need it, but if you use fresh ingredients you might not need any.
