Oven Baked Blueberry Donuts

Oven Baked Blueberry Donuts are a lighter alternative to traditional deep fried donuts. Flour, sugar, yoghurt, egg and blueberries are combined and baked until golden brown. Dipped in vanilla sugar and served warm, these glorious baked treats are perfect for afternoon tea or after school snacking - give it a go!

Ingredients

Plain all purpose flour 1 Cup (16 tbs)
Baking powder 3/4 Teaspoon
Baking soda 3/4 Teaspoon
Castor sugar 1/3 Cup (5.33 tbs)
Vanilla extract 1 Teaspoon
Low fat vanilla yogurt 1/2 Cup (8 tbs)
Egg 1
Fresh blueberries 250 Gram
Vanilla sugar 1 Teaspoon
Cooking oil spray 1

Directions

GETTING READY:

Preheat oven to 350F/ 190C.

Grease donut tray with cooking oil spray.

MAKING:

In a bowl, combine flour, castor sugar, baking powder, baking soda and stir well.

In another bowl, combine yogurt, egg, vanilla extract and whisk well.

Add egg mixture to flour mixture and mix well.

Fold in blueberries and mix well.

Fill donut pan with mixture and pop into oven.

Bake for 10-12 minutes or until golden brown.

Once done, allow to cool completely and sprinkle with vanilla sugar over it.
