Amazing Amazing! Stuffed Blueberry Donuts


Pastry flour 2 Cup (32 tbs)
Natural sugar 3/4 Cup (12 tbs)
Baking soda 2 Teaspoon
Sea salt 1 Teaspoon
Ground nutmeg 1/2 Teaspoon
Hot water 1/4 Cup (4 tbs)
Ground flax seed 2 Tablespoon
Vanilla soy milk 3/4 Cup (12 tbs)
Melted vegan butter 2 Tablespoon
Crushed blueberries 1/4 Cup (4 tbs)
Blueberry filling 2 Tablespoon
Cream cheese filling 2 Tablespoon
Cooking spray 1 Dash (for greasing)



Grease the mold with cooking spray and set aside.

Preheat the oven to 425 degrees.


In a large bowl, mix the flour, sugar, baking soda, salt and nutmeg. Keep stirring.

In a small bowl, mix water and flax seed. Let it sit for few minutes and then add in soy milk and butter. Mix it well.

Pour it in the dry ingredients. Add blueberries and whisk properly. If batter is thick then add little water.

Transfer the batter into the pitcher.

Fill half the mold with batter and make circle with blueberry and cream cheese filling pastry bags and then cover with batter.


Bake the donuts for about 10 minutes.
