Ya mon! You definitely want to give this a whirl! These sausages are hand stuffed and smoked. They are packed with amazing Jerk goodness, you want to give it a try!

Ingredients

Jerk paste
Sliced fresh ginger 1/4 Cup (4 tbs)
Sliced fresh garlic 1/4 Cup (4 tbs)
Sliced fresh spring onions 1/4 Cup (4 tbs)
Onion 1/4 Cup (4 tbs)
Scotch bonnet peppers 4
Cumin powder 1 Tablespoon
Lime juice 1/4 Cup (4 tbs)
Soya sauce 1/3 Cup (5.33 tbs)
Salt 1 Tablespoon
Brown sugar 1 1/2 Tablespoon
Orange juice 1/4 Cup (4 tbs)
Cinnamon powder 1 Tablespoon
Clove powder 1/2 Tablespoon
Pimento 2 Tablespoon
Black peppercorns 1 Tablespoon
Vinegar 1/4 Cup (4 tbs)
Oil 1 Tablespoon
Thyme 2 Tablespoon
Chicken:
Ground chicken 1 Pound
Bboneless chicken chunks 300 Gram
Salt 1 Tablespoon
Finely chopped scotch bonnets 2 Tablespoon
Thyme leaves 1/2 Cup (8 tbs)
Collagen casings To Taste

Directions

MAKING:

1. Prepare the Jerk sauce by blending all the ingredients together

2. This can be store for uptown two weeks in the fridge

3. Add salt & 5 tbsps of this paste to the chicken

4. Add the scotch bonnet peppers and thyme and give it a good mix

5. Tie one end and start stuffing the sausages using a sausage horn

6. When you have the length you like, tie and cut it

7. I like to smoke these on the BBQ for 30 mins
