This carrot pie recipe is one of those sweet pie recipes that is almost forgotten about. Overtaken by sweet potato and pumpkin pies. But carrot pie has a great flavor and texture. This carrot pie recipe is a winner.

Ingredients

Cooked mashed carrots 1 1/2 Cup (24 tbs)
Brown sugar 2/3 Cup (10.67 tbs)
Cinnamon powder 1 Teaspoon
Dried ginger powder 1/2 Teaspoon
Salt 1/2 Teaspoon
Eggs 2
Sweet milk 1 1/2 Cup (24 tbs)
Sweet cream 1/2 Cup (8 tbs)
9 inch pie shell 1 (Shallow pie shell)

Directions

GETTING READY:

1. Pre-heat oven to 425ºF.

MAKING:

2. Mix ingredients and pour into a 9" shallow pie shell.

3. Bake at 425ºF for 10 minutes, then lower temp to 325ºF.

4. Bake until middle just barely jiggles - about 1 hour more.

SERVING:

5. Serve and enjoy.
