Nargisi Kofta - Scotch Egg Kofta Curry

Similar to a scotch Egg, ground meat is wrapped around an egg, cooked in hot oil and then simmered in a rich gravy. As the name suggests, this is a rich preparation!

Ingredients

For meat mixture:
Ground meat 500 Gram (Beef, Lamb or Mutton)
Salt To Taste
Pepper 1/2 Teaspoon
Ginger garlic paste 1 Teaspoon
Chopped green chilli 1/2 Teaspoon
Finely minced onion 1/4 Cup (4 tbs)
Cumin powder 1/2 Teaspoon
Turmeric 1/2 Teaspoon
Chilli powder 1/2 Teaspoon
Garam masala 1/2 Teaspoon
Egg 1/2 , beaten
Chopped coriander 2 Tablespoon
For eggs and gravy:
Boiled eggs 4
Yogurt 1 Cup (16 tbs)
Salt To Taste
Ginger garlic paste 3 Tablespoon
Turmeric 1/4 Teaspoon
Coriander 2 Teaspoon
Cumin 1 Teaspoon
Red chilli powder 1 Teaspoon
Garam masala 1 Teaspoon
Fried onions 1/2 Cup (8 tbs) , finely chopped
Fresh oil 1/2 Cup (8 tbs)
Finely diced onion 1 Cup (16 tbs)
Sliced green chili 1 Tablespoon
Pureed tomatoes 2 Cup (32 tbs) (blanched and pureed Tomatoes)
For finishing:
Red chilli powder 1 Teaspoon
Cashew paste/Almond paste 1 Tablespoon
Salt To Taste
Pepper 1 Pinch
Mint leaves 1/2 Tablespoon
Coriander leaves 1/2 Tablespoon
Fried onions 1 Tablespoon

Directions

MAKING:

1. Mix all the ingredients together with the meat to prepare the meat mixture.

2. Divide into 4 and flatten each portion and place an egg in the centre and cover with the meat mixture and seal tightly.

3. Heat oil and cook the Koftas in batches making sure they are brown on all sides, remove and keep aside.

4. To prepare the gravy, first mix the yogurt with the salt, ginger and garlic paste, the spices and the fried onions.

5. Heat the oil and add the onion and chilli.

6. Add all the prepared yogurt mixture and cook for 5 - 7 mins.

7. Add the tomato puree, cover and cook for another 10 - 15 mins.

8. Add the extra chilli powder, cashew or almond paste, salt and pepper.

9. Add the Koftas into the gravy and cook for 3 mins on one side, flip over and cook on the other side.

SERVING:

10. Garnish with mint, coriander and fried onions.
