Pickle or Achar as it's called in Hindi is different from how we think about pickles in North America. And like many recipes there are literally a hundred different ways to make them. There are so many vegetables that get pickled but the most common are Carrot, Eggplant, Gherkins, Mango and of course Limes Lemons. There are also non vegetarian Fish and Shrimp pickles.
