Finely ground almonds | 3 1/2 Ounce | |
Baking powder | 2 Teaspoon | |

Maple cream cheese icing | ||
Cream cheese | 4 Ounce | |
Butter | 2 Tablespoon | |
Pure maple syrup | 2 Tablespoon | |
Pure vanilla extract | 1 Teaspoon | |
Icing sugar | 1/2 Cup (8 tbs) |
For the Cake:
1. Preheat the oven to 190ºC (375°F).
2. Grease and line an 8" springform cake pan.
3. In a food processor, purée the beans, maple, and vanilla until smooth.
4. With the processor running; add the eggs one by one.
5. Transfer the bean mix into a bowl; add the almonds, baking powder, butter, and salt.
6. Mix to combine.
7. Transfer the batter into the pan and bake for 30 to 40 minutes, or until a tester comes out clean.
8. Let the cake cool a few minutes in the pan, then release and let cool completely on a rack.
9. Top with icing when fully cooled.
For the Icing:
10. Beat cream cheese and butter in large bowl until smooth.
11. Add maple syrup, and vanilla; beat until smooth.
12. Add just enough icing sugar to reach your desired stiffness.
