Rendered bacon fat | 3 Tablespoon | |
Onions | 2 | |
Garlic | 2 Clove (10 gm) | |
Oregano | 1 Teaspoon | |
Dry ground mustard | 1 Tablespoon | |
Chipotle powder | 2 Teaspoon | |
Ancho chili powder | 1 Teaspoon | |
Ketchup | 1 1/2 Cup (24 tbs) | |
Soy sauce | 2 Tablespoon | |
Vinegar | 1/4 Cup (4 tbs) | |
Worcestershire sauce | 2 Tablespoon | |
Maple syrup | 2 Tablespoon |
MAKING:
1. Sauté the minced onions in the rendered bacon fat over medium low heat until translucent.
2. Add the garlic and cook until fragrant.
3. Add dry spices and cook for another minute.
4. Stir in remaining ingredients.
5. Simmer and stir occasionally for about 15 to 20 minutes until thick.
6. If you like it a bit chunky, store in a glass container.
7. If you like it smooth, run it through a blender and then store in a glass container.
