This Crab Caldine gravy is stellar, and is made by grinding coriander seeds, cumin, peppercorns, onions, red chillies, tamarind and coconut to make a golden yellow curry paste, a beautiful gravy bath for the crab to cook in.

Kashmiri chillies | 2 | |
Peppercorns | 1 Teaspoon | |
Coriander seeds | 1 Teaspoon | |
Cumin seeds | 1 Teaspoon | |
Garlic | 4 Clove (20 gm) | |
Onions | 1/2 Cup (8 tbs) | |
Shredded coconut | 1 Cup (16 tbs) | |
Turmeric powder | 1 Teaspoon | |
Tamarind | 15 Gram (use as required) | |
Water | 2 1/2 Cup (40 tbs) | |
Gravy: | ||
Coconut oil | 1 Tablespoon | |
Finely diced onion | 1/2 Cup (8 tbs) | |
Green chillies | 3 | |
Salt | To Taste |
MAKING:
1. Wash and clean the crabs if required and add the Turmeric and rub this all over the crab
2. Lightly toast the dried chillies, cumin & coriander seeds and peppercorns, cool and then grind to a powder
3. In a food processor add the garlic, onions and coconut
4. Add the turmeric and the tamarind and start with 1/2 cup of water and process
5. Strain this separating the liquid from the solids
6. Process the solids adding more water 2 - 3 times till you get a nice bowl of silky gravy
7. In a large pot, melt the coconut oil and saute the diced onion and slit green chillies
8. Add the crab and allow it to roast for a minute and then pour the silken gravy over and allow the crabs to cook for 15 - 20 mins
9. Add salt to taste
