Stuffed Karelas Or Bitter Gourd

Our special guest on Kravings friends is my BFF Blanche Barretto. A great cook in her own right, she's going to show us how to prepare and stuff Karelas or bitter gourd and because she has such a big heart she's giving us BOTH Vegetarian and Non-Vegetarian options.


Bitter gourds 8 (4 for the veg and 4 for non veg)
For veg filling:
Boiled potatoes 2 , grated
Boiled carrot pieces 42 Gram
Boiled peas 42 Gram
Onion 1
Cumin seed 1/4 Teaspoon
Mustard seeds 1/4 Teaspoon
Curry leaves 6
Garlic cloves 2 (lightly pounded)
Lemon juice 1/2 Teaspoon
Chilli powder 1/4 Teaspoon
Salt To Taste
Oil 1 Tablespoon
For non veg filling:
Chopped shrimps 1 Pound (keep on a tissue or a strainer so that the shrimps have less moisture)
Onions 2
Green chillies 4 Small
Chopped coriander 1/4 Cup (4 tbs)
Turmeric 1 Pinch
Chilli powder 1/4 Teaspoon
Salt To Taste




1. Add the garlic, cumin and mustard seeds.

2. After you see the mustard seeds sputter a bit add the curry leaves and onion.

3. Sauté till the onion is a little translucent.

4. Add in the turmeric and chilly powder along with the potatoes, carrots and peas.

5. Stir till all the ingredients are mixed well.

6. Add the salt as per your tasty.

7. Lastly pour in the lemon juice.

8. Give it a good stir and turn the gas off.

9. Wait for the mixture to cool for the stuffing.



1. Heat oil in a pan and add the onions.

2. Add in the shrimp Stir fry till almost cooked.

3. Add the salt, turmeric and chilly powder.

4. Stir well, add the coriander and done.

5. Cool this mixture a bit for stuffing.



1. Scrape the pokey ridges a bit off the outer part of the bitter gourd.

2. Slit and take off the seeds from within.

3. Boil in water with some salt, turmeric and cumin seeds.

4. Do not over boil. The Bitter gourd should still be a little crunchy.

5. Stuff the filling in the bitter gourd. Tie with some thread for the mixture to stay firm.

6. Heat some oil in the pan and add the stuffed bitter gourd in it. Fry on either sides till you see it change color to a little golden brown.


7. Serve and enjoy!
