1938 Date Sandwich - Date Squares

This 1938 Date Sandwich (Date Squares) Recipe has always been a staple on our holiday dessert trays.

Ingredients

For filling:
Date 500 Gram , pitted (about 1 pound, chopped)
Water 375 Milliliter (about 1 1/2 cups)
Butter 5 Milliliter (about 1 tsp)
Packed brown sugar 110 Gram (about 125 mL / ½ cup)
Pure vanilla extract 10 Milliliter (about 2 tsp)
For crust:
Large flake oats 425 Milliliter (1 3/4 cups, rolled oats)
All purpose flour 280 Gram (500 mL / 2 cups)
Packed brown sugar 225 Gram (250 mL / 1 cup)
Baking soda 5 Milliliter (about 1 tsp)
Salt 1 Pinch
Cold butter 180 Gram (175 mL / ¾ cup)

Directions

GETTING READY:

1. Preheat oven to 180ºC (350ºF).

MAKING:

2. In a small pot bring water, brown sugar, dates, and butter to a boil.

3. Stir and boil for 1-2 minutes, then remove from heat and let cool slightly.

4. In a food processor, mix together; rolled oats, flour, brown sugar, soda, salt, and butter.

5. Process to a fine mix.

6. Pour ½ of the oat mix into a 9x9” baking pan and pat down firmly.

7. Stir the vanilla into the slightly cooled date mix, and pour overtop the oat mix ‘crust’.

8. Evenly distribute the remaining oat crust overtop the date mixture and press down lightly.

9. Bake for 35-45 minutes.

10. Allow to cool before slicing.
