Diwali or deepavali is the festival of light, festivity and celebration. No celebration or festival is complete without sweets.

Ingredients

For kesar badam katli:
Almond meal/Almond flour 1 1/2 Cup (24 tbs) (badam powder)
Powdered sugar 1/2 Cup (8 tbs)
Saffron strand 5
Yellow food color 1 Pinch (optional)
Luke warm water 2 Tablespoon
Decoration 1/4 Cup (4 tbs) (silver leaves / varak, optional)
Milk powder 2 Tablespoon (optional)
Oil/Butter 1/2 Teaspoon (For greasing)
For kaju pista rolls:
Cashew powder 1 1/4 Cup (20 tbs)
Pistachio powder 3/4 Cup (12 tbs)
Powdered sugar 3/4 Cup (12 tbs) , divided (1/2 cup for cashew dough and 1/4 cup for pistachio dough)
Rose essence 2 Drop (optional)
Water 2 1/2 Tablespoon , divided (1 1/2 tbsp for cashew dough and 1 tbsp for pistachio dough)
Green food colouring 3 Drop
Decoration 1/4 Cup (4 tbs) (optional)
For instant jalebi sugar syrup:
Sugar 2 Cup (32 tbs)
Water 1 1/2 Cup (24 tbs)
Rose syrup 3 Drop (optional)
Saffron strands 6 (optional)
All purpose flour 1 Cup (16 tbs)
Chickpea flour 2 Tablespoon
Rice flour/Corn starch 2 Tablespoon
Yellow food color 1 Pinch
Water 1 Cup (16 tbs)
Oil 2 Tablespoon
Fruit salt 1/2 Teaspoon
Lime juice 1/4 Teaspoon
Oil 2 Cup (32 tbs)
For dudh halwa:
Condensed milk 7 Cup (112 tbs)
Mawa 3 Cup (48 tbs)
Milk 1 Cup (16 tbs)
Saffron strands 6
Ground cardamom 1 Pinch
Ghee 1 Tablespoon
Food colour 1 Pinch (brown food colour)
Chopped almond 1 Tablespoon
For mothichoor burfi laddu:
Semolina 1 Tablespoon
Sugar 1 Cup (16 tbs)
Cup (16 tbs) 1 Cup (16 tbs) , divided (1/2 cup for the sugar syrup and 1/2 cup for the batter)
Saffron strands 5
Chickpea flour 1 Cup (16 tbs)
Yellow food color 1 Pinch
Baking soda 1 Pinch
Oil 1 1/2 Cup (24 tbs) (For deep frying)
Ghee 1/4 Cup (4 tbs) (For deep frying)
Hot water 1 Tablespoon
Ground cardamom 1/4 Teaspoon
Sliced almonds 2 Tablespoon
Sliced pistachios 2 Tablespoon
