I LOVE a good salad filled with berries! This beautiful and easy salad takes advantage of all those beautiful Spring fruits while pairing them with an easy lemon poppyseed vinaigrette. Hello Spring!
For the salad: | ||
Spinach | 2 Cup (32 tbs) | |
Red onion rings | To Taste , thinly sliced | |
Strawberries | 4 , cut in half | |
Blackberries | 4 , cut in half | |
Chopped walnuts | 1 Tablespoon | |
Goat cheese | 1/2 Ounce , crumbled | |
Vinaigrette: | ||
Lemon | 1/2 | |
Dijon mustard | 1/2 Teaspoon | |
Honey | 1/2 Teaspoon | |
Poppy seeds | 1/4 Teaspoon | |
Grapeseed oil | 2 Tablespoon |
MAKING:
1. On a plate add the spinach.
2. To the top add the thinly sliced red onion, strawberries, blackberries, walnuts, and crumbled goat cheese.
3. In a small bowl whisk together the lemon juice, Dijon, honey, and poppyseeds until mixed together. Slowly drizzle in your grapeseed oil while whisking to emulsify.
FOR SERVING:
4. Drizzle the vinaigrette over the salad, toss, and devour! Happy Spring!
