Chocolate Chip Cookies finally without all the carbs!
Almond flour | 2 Cup (32 tbs) | |
Sugar free chocolate chips | 1/2 Cup (8 tbs) | |
Stevia | 1 Tablespoon | |
Salt | 1/4 Teaspoon | |
Baking soda | 1/8 Teaspoon | |
Coconut oil | 4 Tablespoon | |
Vanilla extract | 1 Teaspoon | |
Almond milk | 3 Teaspoon |
MAKING:
1. So firstly into a large bowl add the almond flour, not only does this give the cookie a great taste but it makes it chewy too. Next add your sugar substitute, I’m using stevia. Add pinch of salt and the baking powder.
2. Next in the chocolate chips, you can find keto friendly chocolate chips online and they aren’t that expensive or sugar free ones in the stores. Stir through the dry ingredients, then add your coconut oil, almond milk and a touch of vanilla extract. If you have nut allergies you can swap out the flour and milk for coconut if you can tolerate it and use the same method.
3. Mix together well until it loosely comes together, then grab golfball size pieces and roll with your hands until smooth. Place on a baking tray with parchment paper or a silicon mat and gently flatten out slightly with a off set pallet. Place into a preheated oven at 180C or 350F for 10-12 minutes or until golden brown. Leave to cool on the tray completely, if you touch them while still hot they will fall apart so resit the urge as much as you can.

4. It goes great with a nice cold glass of almond milk or even better a small espresso. You won’t believe how good these are, even if you aren’t on a low carb diet they taste amazing and everyone should try these out they are that good! Enjoy!
