We Made The Most Viewed Chicken Marsala Recipe On Youtube... and it isn't great. (We'll remake this better in a future episode). Chicken Marsala is a staple of Italian American restaurants, but the recipe dates back to a time when Sicily wasn't yet part of Italy. Originally Chicken Marsala would have been Veal Marsala - or more correctly Veal Sicily Madeira? The history of this dish is tied to the evolution of the wine industry on Sicily at the hands of English wine merchants and their French household chefs.
|All purpose flour||1 1/2 Cup (24 tbs) (375 ml)|
|Salt||1 1/2 Teaspoon (7 ml)|
|Fresh ground pepper||1 1/2 Teaspoon (7 ml)|
|Olive oil||1/2 Cup (8 tbs)|
|Skinless boneless chicken breasts||2|
|Mushrooms||500 Gram (1 lb)|
|Dry marsala||1 Cup (16 tbs) (250 ml)|
1.Butterfly and flatten the chicken breasts.
2.Mix the salt, pepper, and flour.
3.Dredge the chicken in the flour mixture.
4.Heat a pan on medium high, and coat with the olive oil.
5.Brown the chicken on both sides.
6.Slice the mushrooms.
7.Remove the chicken and fry the mushrooms in the same pan. (Add more oil if needed)
8.When the mushrooms have released their moisture, add in the Marsala and reduce to a thick syrup.
9.Add the chicken back to the pan, and cook until chicken is done.
10.Serve and enjoy.
