Kat Vada is an authentic Kolhapuri recipe made with a mix of two dishes Vada and spicy curry. To all the spicy food lovers out there Kat Vada is a recipe that is a must try.

Ingredients

For masala:
Oil 2 Teaspoon
Onion 1 Teaspoon
Ginger 1 Inch
Garlic clove 7
Dry coconut 1/4 Cup (4 tbs) , grated
Poppy seeds 1 Teaspoon
Cumin seeds 1 Teaspoon
Coriander seeds 1 Tablespoon
Black stone flower 1
Cinnamon stick 1 Inch
Star anise 1
Black cardamom 1
Green cardamom 2
Cloves 7
Black pepper 12
Tomato 1
For kat:
Oil 4 Tablespoon
Asafoetida 1/4 Teaspoon
Turmeric powder 1 Teaspoon
Red chilli powder 2 Teaspoon
Salt To Taste
Water 4 Cup (64 tbs)
For vada:
Oil 2 Tablespoon
Mustard seeds 1 Teaspoon
Curry leaves 5
Turmeric powder 1 Teaspoon
Potatoes 7
Salt To Taste
Gram flour 2 Cup (32 tbs)
Turmeric powder 1/2 Teaspoon
Baking powder 1/2 Teaspoon
Water 1/2 Cup (8 tbs) (use as required)
Oil 2 Cup (32 tbs) (For deep frying)
For watan:
Garlic clove 12
Ginger 1 Inch
Coriander leaves To Taste
Curry leaves 5
Green chillies 4

Directions

MAKING:

For Masala:

1. Heat oil in a pan, add onion, ginger, garlic, coconut, poppy seeds, cumin seeds, coriander seeds, stone flower, cinnamon, star anise, black cardamom, green cardamom, cloves, black pepper, fry them till the coconut turns reddish. Add tomato and mix well.

2. Let the mixture cool down, transfer it to a mixer jar, add water and grind it into a paste.

For Kat:

3. Heat oil in a vessel, add asafoetida, ground masala, turmeric powder, red chilli powder, salt and mix well.

4. Saute the masala till it starts leaving the water.

5. Add water, give it a boil and switch off the flame.

For Vada:

6. Heat oil in a pan, add mustard seeds, curry leaves, ground green masala and saute it on low flame until the raw flavour goes away.

7. Add turmeric, potatoes, salt and mix well. Our Batata Wada filling is ready.

8. In a bowl of gram flour, add turmeric powder, salt, baking soda, water and mix well.

9. Take a small portion of the filling, dip it in batter and fry it in hot oil for 2 minutes, until it turns golden brown.

SERVING:

10. In a plate serve the Kat Vada with curry, onion and lemon.
