Mutton Nihari or Nalli nihari is a juicy mutton recipe made by slow cooking mutton in spices. This nihari recipe tastes best with Partha or Naan.

Ingredients

Ghee 2 Tablespoon
Oil 2 Tablespoon
Onion 4 , slice
Mutton 1 Gram
Ginger paste 1 Tablespoon
Garlic paste 1 Tablespoon
Masala 2 Tablespoon (Nihari ka masala, see the recipe ingredients below)
Red chilli powder 1 Teaspoon
Yogurt 300 Gram , beaten
Salt To Taste
Water 2 Cup (32 tbs)
Paste 3 Tablespoon (Wheat Flour + Water paste)
Ginger piece 3 Inch , julienned
Finely chopped green chillies 1/4 Teaspoon
Finely chopped mint leaves 1/2 Teaspoon
For nihari masala:
Cumin seeds 2 Teaspoon
Fennel seeds 1 Teaspoon
Black peppercorns 1 Teaspoon
Star anise 1
Cinnamon stick 1 Inch
Mace 1
Cloves 1/2 Teaspoon
Green cardamoms 4 (seeds only)
Black cardamoms 2 (seeds only)
Channa daal 1 1/2 Tablespoon
Kashmiri chillies 6
Poppy seeds 1 Teaspoon
Bay leaf 1
Ginger powder 1 Teaspoon

Directions

FOR NIHARI MASALA:

MAKING:

1. Heat a wok, add cumin seeds, fennel seeds, roast it for few seconds.

2. Add black peppercorns, star anise, cinnamon, mace, saute it for few seconds more.

3. Add cloves, black&green cardamom, bengal gram, kashmiri chillies, poppy seeds and switch off the flame.

4. Add bay leaf, ginger powder, let it cool down and then grind it to a fine powder.

5. Our Nihari Ka Masala is ready.

FOR NALLI NIHARI:

MAKING:

1. Heat ghee in a vessel, oil, onions and saute them till they are nice and crisp.

2. Add mutton, fry it on high flame for 5-6 minutes.

3. Add ginger paste, garlic paste, fry it till the raw smell goes off.

4. Add nihari ka masala, red chilli powder, yogurt, saute it till the oil separates.

5. Add salt, water and pressure cook it till the mutton is cooked.

6. Switch off the gas, open the lid and take out the oil floating on top.

7. Switch on the gas and add wheat flour paste and boil it on medium flame for 5-6 minutes.

8. Our Nalli Nihari is ready to plate.

9. Drizzle the oil take out on the nihari.

10. Garnish it with ginger juliennes, green chillies and mint.
