This classic recipe is definitely worth a go is the best fried squid you will ever have!
For the squid: | ||
Squid | 4 Medium , cleaned | |
Lime | 1 , juiced | |
Freshly cracked black pepper | To Taste | |
Salt | To Taste | |
Vegetable oil/Groundnut oil | 2 Cup (32 tbs) (((((For deep frying))))) | |
Corn flour | 3 Tablespoon | |
For the dressing: | ||
Green peppercorns in brine | 2 Tablespoon | |
Red chilli | 1 | |
Ginger piece | 1/4 Inch , finely grated | |
Thai fish sauce | 3 Tablespoon | |
Rice vinegar | 3 Tablespoon | |
Caster sugar | 75 Gram | |
Soy sauce | 2 Teaspoon | |
Lime | 1 , juiced | |
Water | 1/2 Cup (8 tbs) | |
To serve: | ||
Baby coriander leaves | To Taste | |
Lime slices | 4 Small |
Making:
1. To make the dressing, put all the ingredients in a small pan and simmer, stirring until the sugar has dissolved and the mixture has thickened. Leave to cool slightly.
2. Using a sharp knife slice the squid tube into 1cm thick rings.
3. Place in a bowl and squeeze over fresh lime juice, season well with salt & pepper and leave to cure for 2 minutes.
4. Heat plenty of oil in a large saucepan or deep fryer to 180c/350f.
5. Dry the squid throughly on kitchen paper, then toss with cornflour.
6. Shake off the excess and deep-fry in batches for 2 minutes or until golden and crisp.
7. Drain of kitchen paper, then plate up the rings and drizzle over the dressing with a slice of lime on the side and coriander to garnish.
SERVING:
