Unsalted butter | 1/2 Cup (8 tbs) , softened | |
Cream cheese | 6 Ounce , softened (I use Trader Joes) | |
Sugar replacement | 3/4 Cup (12 tbs) (I used Swerve) | |
Eggs | 4 Large | |
Pure lemon extract | 2 Teaspoon | |
Stevia extract | 20 Drop | |
Blanched almond flour | 2 Cup (32 tbs) (I use the Costco Brand) | |
Baking powder | 1 1/2 Teaspoon | |
Salt | 1/4 Teaspoon | |
For glaze: | ||
Sugar replacement | 2/3 Cup (10.67 tbs) (I used Swerve) | |
Heavy cream | 4 Tablespoon | |
Pure lemon extract | 1/2 Teaspoon |
GETTING READY:
1.Preheat oven to 350 degrees.
MAKING:
2.In a medium bowl combine the almond flour, baking powder and salt then set aside.
3.In a large mixing bowl using an electric hand mixer whisk the butter, cream cheese and sweetener until combined. Add the egg (one at a time) until well combined. Add the liquid Stevia and the lemon extract and combine.
4.Gradually add the flour to the cream cheese mixture and combine until you get a uniformed mixture.
5.Spoon the mixture into a parchment line baking dish and bake for 45-55 minutes. Allow to completely cool.
6.Top with the glaze mixture.
