So Moist - Lemon Velvet Poke Cake

This Lemon Velvet Cake recipe is so easy, and it feeds a crowd! This is a poke cake... but we decided not to poke it.

Ingredients

Sugar 400 Gram (500 mL / 2 cups)
Lemons 4 (zest only)
Cake flour 160 Gram , sifted (375 mL / 1½ cups)
All purpose flour 210 Gram (375 mL / 1½ cups)
Baking powder 10 Milliliter (2 tsp)
Baking soda 1 Milliliter (1/4 tsp)
Coarse salt 3/4 Teaspoon (3 mL)
Butter 180 Gram (175 mL / ¾ cup)
Eggs 2 Large
Yolks 2
Pure vanilla extract 2 Milliliter (1/2 tsp)
Lemon juice 60 Milliliter (1/4 cup)
Plain yogurt 250 Milliliter (1 cup, high fat)
For glaze:
Confectioners sugar/Icing sugar 325 Gram (675 mL / 2½ cups)
Lemon juice 75 Milliliter (1/3 cup)

Directions

GETTING READY:

1. Preheat the oven to 180ºC (350°F).

2. Grease and flour 13x9x2" cake pan.

MAKING:

3. In a stand mixer, combine the sugar and the lemon zest; with the paddle attachment grind the sugar and zest together to release all of the oil.

4. In another bowl, mix together the flours, baking powder, baking soda, and salt.

5. Cream the butter into the sugar/lemon zest.

6. Beat in the vanilla.

7. Add the yolks and eggs, one at a time, beating between each addition.

8. While still beating add the yogourt and lemon juice.

9. Spoon in the dry ingredients a little at a time, and mix until fully incorporated.

10. Transfer the batter to the prepared pan and bake for 30 to 35 minutes.

11. Remove the cake from the oven, and let cool on a rack for 10-15 minutes.

12. Remove the cake from the pan and set on a rack over a baking sheet.

13. Make the glaze by whisking the lemon juice into the icing sugar until smooth.

14. Pour the glaze over the cake, spreading the glaze to cover it.
