Toasted Hummus Sandwich With Vegetables

A famous dip from the Middle East, Hummus features an amazing combo of chickpeas, garlic and curds. It has a nice texture, a bit of tang and a pungent taste, which are enhanced further in this recipe, by adding crunchy veggies, cheese, and a dash of herbs and spices.
This multi-textured and super-tasty mix of hummus and veggies makes a great spread for bread toast. The crispness of the toast complements the rich texture of this spread, making it a real treat to the palate. Toasted Hummus Sandwich with Vegetables is indeed a very unusual treat, which you will enjoy to the core!


For hummus:
Water 3 Tablespoon
Soaked and boiled kabuli chana 1 Cup (16 tbs) (white chick peas)
Olive oil 1 Tablespoon
Garlic 2 Clove (10 gm) (lehsun)
Curd 1/4 Cup (4 tbs) (dahi)
Salt To Taste
For other ingredients:
Sandwich bread slices 12
Olive oil 1 Tablespoon
Finely chopped garlic 1 Teaspoon (lehsun)
Finely chopped onions 1/4 Cup (4 tbs)
Finely chopped capsicum 1/2 Cup (8 tbs) (colourful)
Finely chopped broccoli 1/2 Cup (8 tbs)
Finely chopped basil 1 Tablespoon
Dried oregano 1 Teaspoon
Dry red chilli flakes 2 Teaspoon
Grated processed cheese 1 Tablespoon
Salt To Taste
Butter 6 Teaspoon



1. Heat the olive oil in a deep non-stick pan, add the garlic and onions and sauté on a medium flame for 1 minute.

2. Add the capsicum and sauté on a medium flame for 1 minute.

3. Add the broccoli, basil, oregano, chilli flakes, cheese and salt and sauté on a medium flame for 1 minute.

4. Switch off the flame, cool the mixture slightly, add the prepared hummus and mix well.

5. Divide the mixture into 6 equal portions and keep aside.

6. Place 2 toasted bread slices on a clean, dry surface, spread 1/2 tsp of butter on each slice. Spread a portion of the mixture evenly on a buttered bread slice and cover it using another buttered bread side facing downwards and press it lightly.

7. Repeat step 6 to make 5 more sandwiches.

8. Cut each toasted hummus sandwich with vegetables diagonally into 2 equal pieces.


9. Serve immediately.
