Combining Apple Pie, with a scroll with a cookie and glaze equals guaranteed deliciousness!
|Apples||3 Large , dice (core removed)|
|Sugar||1/2 Cup (8 tbs)|
|Cinnamon powder||1 Teaspoon|
|Puff pastry sheets/Short crust pastry||2 Tablespoon|
|Demerara sugar||2 Tablespoon|
|Icing sugar/Confectioner sugar||1 Cup (16 tbs)|
|Corn syrup||2 Tablespoon|
1. Preheat your oven to 180c/350f.
2. In a small bowl mix together the sugar and cinnamon. Coat the apples with the sugar mixture. Place the pastry on a flat working surface or roll out pastry until thin if using homemade. Spread the apples over evenly making sure you don't make a double layer.
3. Roll up the pastry, don't worry if some apple pushes out at the end (they can be placed back in on the sides). Cut into 12 pieces, place them on a baking tray lined with baking paper nd sprinkle over the Demerara sugar on the tops. Bake in the oven at 180c/350f for 20-25 minutes or until golden.
4. To make the icing, mix together the sugar, milk and vanilla. Once combined add the corn syrup and mix well again until glossy and smooth. Place into a piping bag and drizzle over the pinwheels when slightly cooled.
