Pindi Chole - No Onion No Tomato Amritsari Chana Masala

Ingredients

For steak:
Chole 1 Cup (16 tbs) , soaked ((Boiled))
Water 2 Cup (32 tbs)
Tea leaves 2 Teaspoon
Salt 1 Teaspoon ((Or to taste))
Black cardamom 3
Baking soda 1/4 Teaspoon
For roasting the eggplant:
Salt 1/2 Teaspoon
Black salt 1/2 Teaspoon
Black pepper 1/2 Teaspoon
Turmeric 1/2 Teaspoon
Garam masala 1/2 Teaspoon
Finely chopped fresh coriander 2 Tablespoon
Cumin powder 1 Teaspoon
Amchoor powder 1 Teaspoon
Red chilli powder 1 1/2 Teaspoon , divided ((1 tsp is for pindi chole and 1/2 tsp is for the tadka))
Coriander powder 1/2 Teaspoon
Tamarind chutney 2 Tablespoon
Ghee 3 Tablespoon
Oil 1 Teaspoon
Ajwain 1 Teaspoon
Ginger piece 2 Inch , julienned
Anardana 1 Teaspoon
Garlic 3 Clove (15 gm) , julienned
Green chilies 3 , slitted
